Finca Lugmapata is located in Chimborazo, Ecuador, between 1,650 and 2,000 meters above sea level. Since 2012, the Merino family has cultivated specialty coffee, with varieties such as Bourbon Sidra and Typica Mejorado. They have won awards such as the Golden Cup and the Cup of Excellence. Their coffee is distinguished by its fruity and floral flavors. They also support local farmers with training and seedlings.

Parameters:

  • Coffee: 15 g
  • Total water: 240 ml
  • Water temperature: 92 °C
  • Total time: 3:00 – 3:20 min

  • Spill: 1 pre-infusion, 3 pours
 
Step-by-step recipe:
  1. Bloom (pre-infusion):
    • Pour 40 ml water
    • Bloom time: 30 sec
  2. First pour:
    • From 0:30 to 1:00
    • Pour gently in circles until you reach 120 ml
  3. Second spill:
    • From 1:00 to 1:30
    • Go up to 180 ml
  4. Third pour:
    • From 1:30 to 2:00
    • Pour until you reach 240 ml
  5. End of dripping:
    • The water should finish filtering between 3:00 and 3:30 min
