Huma x Finca El Alisal: Origen del mes
En las montañas de Quilanga, Loja, la familia Jaramillo cultiva café desde 1965, cuando los abuelos del actual productor sembraron las primeras plantas en Finca El Alisal. En 2017, la nueva generación tomó ese legado y lo elevó modernizando procesos, incorporando ciencia y técnica y tradujo el terruño lojana en tazas con identidad propia.
El cambio climático exigió repensar la producción. Hoy la finca trabaja con sistemas agroforestales, conservación de suelos y manejo hídrico consciente. En paralelo, el equipo profundiza en fermentaciones controladas para que cada variedad exprese su mejor versión en taza.
El Alisal ha sido reconocido entre los mejores cafés del Ecuador, alcanzando Top 10 en Taza de Excelencia y Top 5 en Taza Dorada. Además, genera empleo local con condiciones dignas y formación a jóvenes de la zona, y funciona como espacio de aprendizaje para productores de Quilanga.
